Mirror mirror on the wall & cooking creations

Confession:: I'm a fan of chalkboard paint/spraypaint.  It's a fabulous & easy way to transform something ordinary into something spectacular.

I borrowed this project idea from my friend Kim, who also was the seller of the home we bought :)

I used these materials

to transform this

into this

It makes a great piece for the mantle or it'd be a perfect addition to a kitchen.
1) I taped newspaper over the mirror portion.
2) Then spraypainted the frame using a creamy white color.
3) I taped paper over the dried frame & used chalkboard spray paint on the mirror.
And tada....it's finished. Super easy!

Some of the gold shows through but I like it. Gives it a rustic look.

I love the way it turned out.

In an attempt to work on one of my new year's resolutions, I cooked something I've never tried before this week. Chicken parmesean. And I must say, it was yummy!  Another super easy "project."

Chicken Parmasean

4 boneless chicken breasts
olive oil (enough to coat chicken)
bread crumbs (enough to coat chicken)
1 can diced tomatoes
1 can tomato paste
1 can tomato sauce (optional)
assorted herbs (optional)
grated parmasean cheese (to taste)

1. Coat chicken with olive oil.
2. Fully coat chicken with bread crumbs.
3. Mix can of diced tomotoes & tomato paste together
4. Add tomato sauce if you want a soupier sauce or more paste if you like thicker sauce.
5. Place chicken in pyrex & pour sauce over chicken.
6. Put herbs on top of sauce if desired (I used basil, oregano & parsley)
7. Top with parmasean cheese.

Bake on 350 degrees for 30-35 minutes or until thoroughly cooked.
Place over cooked noodles if desired.

And this is my finished product.

Even my picky eater was a huge fan. Score!

Can you believe it's already Thursday (well almost!)?? The first part of this week has flown for me. Looking forward to a weekend of rest & relaxation before a couple of very fun weekends with friends :) Can't wait to see you guys!!

One a completely different note, I was really encouraged today by this blogger's post about the truths of how we worship & how we're guilty of trying to separate the sacred from the secular.  Give it a peek to read the full story, but it certainly enlightened me & gave me a deeper picture of the freedom that is in Christ but how my human mind limits me from His freedom.  Her blog is one of my favorites because she often blogs straight to my heart.  It's as if her thoughts are coming directly from my mind sometimes.  And she has some adorable children!

Happy Wednesday night friends!  Hug your children (or your puppies). Give your husband a kiss.  Call your parents & tell them you love them.  Enjoy this night to its fullest and know that I am thankful for you!
